Sweet Potato Gnocchi
Ingredients: 3 cup sweet potato peeled and cubed
1.25 cup flour of choice
2 tbsp. olive oil extra virgin
1 tsp. pink salt
1/4 tsp. ground garlic
Method: Boil Sweet potato for 10 minutes until soft, drain & mash
Add to a mixing bowl with all the other ingredients and mix into a dough Roll out the dough in parts onto a chopping board sprinkled with flour and slice into 1 inch sized pieces Drop the gnocchi into a pan of boiling water and boil for a couple of minutes until the gnocchi stars to float. Don't overcrowd the pan by doing this in small batches. Put the cooked gnocchi onto a plate. Heat some olive oil in a pan along with extra pink salt and rosemary and fry the cook gnocchi on a high heat so it turns a golden brown. Add any veggies you like to this. Spinach, broccoli or kale works well. Serve immediately.
