Mango & Coconut Kid Friendly Curry
Ingredients:
red onion roughly chopped
1 inch piece of ginger
1 tsp. chopped garlic
1/4 tsp. garam masala
1/4 tsp. ground cumin
1/2 tsp. turmeric
1 ripe mango
1 400ml can coconut
2 bay leaves
1 pinch of salt
Method:
Prepare whatever veggies / fish / meat you would like to mix in once the sauce is ready. Boil veggies whilst prepping the sauce Put the onion, ginger, garlic and spices into a blender and blitz until smooth. Add to a pan to warm through. In the meantime blitz the mango in the same blender, then pour into the pan. Add the coconut milk, bay leaves and salt, bring to the boil then simmer for 10 minutes. The sauce is now ready to freeze in batches or mix in with ingredients, warm through and serve straight away. Serve with rice of choice, some toasted cashews and coconut if desired.
