Creamy Cashew Spaghetti with Roasted Brussel Sprouts

Dairy free & vegan, this quick and easy pasta recipe is both creamy and delicious!

Tip blend some vegan Parmesan with the cashew cream sauce to make it extra creamy!  Add some roasted Brussel Sprouts to the mix (mixed with olive oil, salt and pepper and roasted for 15 minutes) - great to add to the smaller divided section of the Eco Cloud Dining Set plate.
