1 Weetabix biscuit

3 fresh strawberries (2 for mashing, 1 for topping)

Approximately 100g milk 🥛

Approximately 100–120g full-fat Greek yogurt

A few raspberries (optional, for topping)

Desiccated coconut (for topping)
Method
- Crush the Weetabix into a bowl to create the base layer.
- Pour in the milk, adding just enough to soften the Weetabix. Mix gently until it forms a soft, even base.
- Spoon the Greek yogurt evenly over the Weetabix layer to create a creamy cheesecake-style topping.
- Mash two strawberries and spread them over the yogurt layer for natural sweetness and flavour.
- Top with the remaining sliced strawberry and a few raspberries for extra freshness.
- Cover and place in the fridge overnight to set.
- In the morning, sprinkle desiccated coconut over the top for added texture and flavour.
