Ingredients

  • Handful Raisins/Sultanas
  • Handful Dried Cranberries
  • Handful Dried Apricots
  • 6 Cloves
  • 1 tsp Nutmeg
  • 1 tsp Ground Spice
  • 1 tbsp Maple Syrup (optional)
  • 1 Large Orange - Zest & Juice
  • Roll of Short Crust Pastry

Method

  • Finely chop all the dried fruit & place into a bowl.

  • Add the cloves, spices, syrup & orange juice/zest to the bowl & mix.

  • Place bowl of fruit mix into the fridge and leave for 24 hrs.

  • Once the fruit mix is thickened, you're ready to make your mince pies.

  • Roll out the pastry and cut out little rounds.

  • Place the pastry rounds into a greased shallow muffin tray.

  • Spoon a little of the fruit mix into each pastry case.

  • Top with a christmas shape, using the leftover pastry.

  • Bake for 15-20 minutes, until the pastry is browning slightly. On 180c
