Super simple to make and perfect for my fussy eater daughter who loves seafood and curry! Thank you Zoe from @mealsforminimouths!
Ingredients
350g Prawns
2 Peppers
1 Onion
Handful of Spinach
1 large Tomatoes
1/2 Cup Red Lentils
1 Cup Vegetable Stock
2 tbsp Tomato Paste
2 tsp Mild Curry Powder
1 tsp Cumin
1 tsp Turmeric
1 tsp Ginger Puree
Squeeze of Lime
Method
1. Melt a little coconut oil in a pan, add the onion & cook until softened
2. Add the peppers, tomatoes, ginger & spices
3. Stir in the tomato paste, coconut milk, stock, lentils and prawns
4. Gently simmer on a low heat for 15-20 minutes
5. Just before serving, thrown in the spinach
