Ingredients:

2/3 cup brown rice cooked to packet instructions
dollop of olive oil
1/2 red onion diced
1/2 red pepper sliced
1 cup cauliflower chopped
2/3 cup frozen peas
1 tsp. curry powder
1 tsp. turmeric
2-3 tbsp. coconut milk
1 smoked mackerel fillets
4 hard boiled eggs
1 palmful chopped flat leaf parsley

Method:

  • 1. Drizzle olive oil in a frying pan and add the onion, red pepper and cauliflower and sauté for 10 minutes 2. Add the peas and rice, stir and after a couple of minutes add in the turmeric and curry powder 3. After another couple of minutes, add the coconut milk and mackerel, cook for a further 5 minutes, stirring several times 4. In the meantime, chop the boiled egg, then add this to the pan with the fresh parsley 5. Season to taste & serve immediately
